Assamese Thali |
A typical assamese thali consisting of rice, lentils, smashed
potatoes, raw papaya cooked with edible alkali, vegetable
curry, barbecued tomato and rice-milk porridge.
Preparation Tips :
1. Rice : Rice is generally steamed boiled.
2. Lentils : Lentils are boiled and subsequently fried with onion, cumim etc.
3. Smashed Potato : Boiled potatoes are smashed with mustard oil, salt, green chilly and coriander leaves.
4. Khar (Papaya cooked with edible alkali) : Khar, is an alkali made by straining water over dried banana leaves.
5. Barbecued Tomato : Tomato is barbecued and smashed with mustard oil, salt, green chilly and coriander leaves.
